Caramel Custard.. Ah! One of the age old puddings that is enjoyed around the world. Also known as Crème caramel or Flan, this super awesome dessert has a layer of soft caramel on top of the scrumptious custard. Not only is it very easy to make, you only need eggs, milk and sugar. Now kitchen doesn’t have that? A perfect Crème caramel will be wobbly and light. You can make this pudding in one big dish or in individual dishes. And did I mention you don’t have to wait for it to cool?? This dessert can be enjoyed hot or cold! I am not sure about the source of this recipe. Its just been with me from forever.

Ingredients
  • 1 cup Milk
  • 6-7 tbsp Sugar
  • 2 Eggs
  • Few drops of Vanilla Extract
  • ¼ tsp grated Nutmeg (optional)
  • Caramel – As per the size of your dish.
  • Butter/ghee for greasing the dish
  • 20 cm round shallow dish
Cooking time: 35 mins Serving: 5-6 people

Caramel Custard

Method

  • In a saucepan, Heat milk and sugar. Keep stirring till the sugar melts completely. Take off fire and leave to cool.
  • Grease the bottom and sides of the dish.
  • Make the required quantity of caramel and pour into the prepared dish.
  • Beat eggs and add to the now cooled milk mixture. The mixture should be cool enough else the eggs might get cooked. Beat well.
  • Stir in the vanilla essence and nutmeg powder. Mix well.
  • Slowly pour on top of the caramel.
  • Pour enough water in a steamer and cook covered till done. It took me about 25 minutes.
  • Take off fire and let it cool for 2-3 minutes before turning out into the serving dish.
  • Enjoy hot or cold!
